Air Fryer Lemon Chicken Bites (Printable Version)

Crispy, tender chicken bites with zesty lemon flavor, air-fried to perfection in just 30 minutes.

# What You'll Need:

→ Chicken

01 - 1.5 lbs boneless, skinless chicken breast or thighs, cut into 1-inch pieces

→ Marinade

02 - 2 tbsp olive oil
03 - 2 tbsp fresh lemon juice
04 - 1 tbsp lemon zest (from about 1 lemon)
05 - 3 garlic cloves, minced
06 - 1 tsp dried oregano
07 - 1 tsp paprika
08 - 1/2 tsp salt
09 - 1/2 tsp freshly ground black pepper

→ Garnish (optional)

10 - 1 tbsp chopped fresh parsley
11 - Lemon wedges

# Method:

01 - In a large bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, salt, and pepper until well combined.
02 - Add chicken pieces to the marinade. Toss thoroughly to coat all pieces evenly. Cover and refrigerate for at least 15 minutes, up to 2 hours for deeper flavor penetration.
03 - Preheat air fryer to 400°F for 3 minutes before cooking.
04 - Place marinated chicken bites in a single layer in the air fryer basket. Cook in batches if needed to avoid overcrowding.
05 - Air fry for 8-10 minutes, shaking or turning pieces halfway through cooking. Continue until chicken is golden brown and internal temperature reaches 165°F.
06 - Transfer to serving plate. Sprinkle with fresh parsley and accompany with lemon wedges.

# Chef's Tips:

01 -
  • The marinade does double duty keeping the chicken impossibly juicy while creating this gorgeous golden exterior that makes people think you spent way more time cooking than you actually did
  • Everything comes together in under 30 minutes but tastes like something from a proper Mediterranean restaurant
02 -
  • Overcrowding the air fryer is the quickest way to end up with steamed instead of crispy chicken. Those pieces need room for hot air to circulate properly.
  • Letting the chicken marinate the full 15 minutes makes a noticeable difference in flavor penetration but anything beyond 2 hours might start breaking down the texture too much.
03 -
  • Pat the chicken pieces dry before adding them to the marinade. This helps the coating adhere better and promotes more even browning.
  • A pinch of red pepper flakes in the marinade adds a subtle warmth that balances the bright lemon flavors beautifully.
