Crunchy, spicy roasted chickpeas with bold Cajun seasoning, ideal for snacks or salad toppings.

# What You'll Need:

→ Chickpeas

01 - 2 cans (15 oz each) chickpeas, drained and rinsed, or 3 cups cooked chickpeas

→ Spices & Seasonings

02 - 2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon dried oregano
07 - 1 teaspoon dried thyme
08 - 1 teaspoon cayenne pepper, adjust to heat preference
09 - 1 teaspoon ground black pepper
10 - 1 teaspoon fine sea salt

# Method:

01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat the chickpeas very dry with paper towels. Remove any loose skins for extra crispiness.
03 - In a large bowl, toss chickpeas with olive oil until evenly coated.
04 - Add smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt. Toss well to coat all chickpeas with seasoning.
05 - Spread chickpeas in a single layer on the prepared baking sheet.
06 - Roast for 35–40 minutes, shaking the pan halfway through, until chickpeas are golden and crispy.
07 - Let cool for 10 minutes before serving. They crisp further as they cool.

# Chef's Tips:

01 -
  • Theyre dangerously addictive—the kind of snack you keep reaching for without realizing it
  • Protein packed satisfaction that actually keeps you full, unlike empty calorie chips
  • Customizable heat level lets you dial it exactly how your family likes it
02 -
  • Soggy chickpeas come from not drying them enough, so spend extra time patting them completely dry before seasoning
  • They might seem slightly soft when you first pull them out but will crisp up perfectly during that crucial cooling period
03 -
  • Letting them cool completely on the baking sheet is essential—they crisp up dramatically in those last 10 minutes
  • Store them with a paper towel in the container to absorb any moisture that might make them soft
