01 - 14 oz cottage cheese, low-fat or regular

→ Seasonings

02 - 1/2 tsp garlic powder
03 - 1/2 tsp smoked paprika
04 - 1/4 tsp ground black pepper
05 - 1/2 tsp sea salt

→ Optional Toppings

06 - 1 tbsp finely chopped chives
07 - 2 tbsp grated Parmesan cheese

# Method:

01 - Preheat your oven to 356°F and line two baking sheets with parchment paper.
02 - Place the cottage cheese in a fine-mesh strainer and press gently to remove excess liquid.
03 - Transfer the cottage cheese to a mixing bowl. Stir in the garlic powder, smoked paprika, black pepper, and salt until evenly combined.
04 - Drop heaping teaspoons of the mixture onto the prepared baking sheets, spacing them about 1 inch apart. Flatten each mound lightly with the back of a spoon to form thin rounds.
05 - Sprinkle with chopped chives and/or Parmesan cheese if desired.
06 - Bake for 20-25 minutes, or until the chips are golden and crisp at the edges. Rotate the trays halfway through for even baking.
07 - Let the chips cool on the tray for 5 minutes, then carefully transfer to a wire rack to cool completely.
08 - Serve immediately or store in an airtight container for up to 2 days.

# Chef's Tips:

01 -
  • You get that irresistible chip crunch with 14 grams of protein per serving
  • They take 35 minutes from start to finish and most of that is hands off oven time
  • The seasoning base is infinitely customizable once you have the technique down
02 -
  • Draining the cottage cheese thoroughly is non negotiable or you will end up with soft rounds instead of crispy chips
  • The chips continue crisping as they cool so do not worry if they feel slightly soft when you first pull them out
  • They are best eaten the same day but will keep in an airtight container for up to 2 days if needed
03 -
  • Use a silicone baking mat instead of parchment for even easier cleanup
  • Let your oven fully preheat before putting the trays in for consistent results
