Cucumber Herb Cream Cheese (Printable Version)

Refreshing finger sandwiches with crisp cucumber and creamy herb cheese, ideal for elegant occasions.

# What You'll Need:

→ Herb Cream Cheese

01 - 8 oz cream cheese, softened
02 - 2 tbsp fresh chives, finely chopped
03 - 1 tbsp fresh dill, finely chopped
04 - 1 tbsp fresh parsley, finely chopped
05 - 1 tsp lemon juice
06 - 1/4 tsp garlic powder
07 - Salt and freshly ground black pepper, to taste

→ Sandwiches

08 - 1 English cucumber, thinly sliced
09 - 12 slices white sandwich bread, crusts removed
10 - 2 tbsp unsalted butter, softened (optional)

# Method:

01 - Combine the cream cheese, chives, dill, parsley, lemon juice, garlic powder, salt, and pepper in a bowl. Mix until smooth and well blended.
02 - Lay out the bread slices. If desired, lightly spread a thin layer of butter on each slice to prevent sogginess.
03 - Evenly spread the herb cream cheese mixture onto each slice of bread. Arrange cucumber slices over half of the bread slices, slightly overlapping. Top with the remaining bread slices, cream cheese side down.
04 - Gently press each sandwich and trim the crusts if not already removed. Cut each sandwich into quarters as rectangles or triangles for serving.

# Chef's Tips:

01 -
  • These come together in fifteen minutes flat but taste like you fussed over them for hours
  • The herb cream cheese doubles as a spread for crackers or bagels later in the week
  • They are impossibly light yet satisfying, perfect for when you want something elegant without feeling weighed down
02 -
  • Cucumber releases water as it sits, so always assemble these no more than two hours before serving or the bread will become unpleasantly soggy
  • A serrated knife is your friend here, sawing gently through the bread rather than pressing down, which squishes the delicate layers
  • Room temperature ingredients are nonnegotiable for that restaurant-quality smoothness in the cream cheese spread
03 -
  • Use a mandoline if you have one for paper-thin, perfectly even cucumber slices
  • Pat the cucumber slices dry with paper towels before layering to remove excess moisture
  • Try adding a few fresh mint leaves to the cream cheese in summer for an extra refreshing twist
