Flaky pastries filled with creamy dulce de leche and topped with cinnamon sugar.

# What You'll Need:

→ Pastry

01 - 1 sheet (8.8 oz) ready-rolled puff pastry, store-bought or homemade
02 - 1 large egg, beaten for egg wash

→ Filling

03 - 7 oz dulce de leche (approximately 3/4 cup)
04 - 1/2 teaspoon ground cinnamon (optional)

→ Topping

05 - 2 tablespoons granulated sugar
06 - 1/2 teaspoon ground cinnamon

# Method:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper and set aside.
02 - Unroll puff pastry on a lightly floured surface. Cut into 8 equal rectangles.
03 - In a small bowl, mix dulce de leche with cinnamon if using.
04 - Place 1 generous tablespoon of dulce de leche mixture in the center of each pastry rectangle. Fold pastry over to form squares or triangles. Press edges firmly with a fork to seal.
05 - Arrange pastries on prepared baking sheet. Brush tops generously with beaten egg.
06 - Combine sugar and cinnamon in a small bowl. Sprinkle mixture evenly over the egg-washed pastries.
07 - Bake for 18-20 minutes until pastries are golden brown and puffed.
08 - Cool slightly on baking sheet. Serve warm or at room temperature.

# Chef's Tips:

01 -
  • The contrast between shatteringly crisp pastry and gooey dulce de leche is absolutely addictive
  • These come together in under 40 minutes but taste like something from a fancy pastry shop
  • The cinnamon sugar topping creates this incredible crackly crust that nobody can resist
02 -
  • Seal the edges really well with your fork or the dulce de leche will escape and create a sticky mess on your baking sheet
  • Cold pastry bakes up flakier, so work quickly and if the dough gets soft, pop it in the fridge for 10 minutes
  • These are best served the same day but can be gently reheated in a low oven to recrisp
03 -
  • If your dulce de leche is too stiff to spread easily, warm it in the microwave for just 10 seconds
  • The pastries are done when they are deeply golden, not just pale brown, so do not be afraid of color
