05 - Season with salt and pepper. If desired, drizzle with lemon juice and garnish with toasted almonds before serving.

# Chef's Tips:

01 -
  • The beans stay impossibly crisp and bright instead of turning into that mushy gray vegetable we all dreaded as kids
  • It comes together in under 25 minutes but tastes like something from a restaurant kitchen
  • The garlic becomes golden and sweet without any bitterness if you watch it closely
02 -
  • Dry your beans thoroughly after the ice bath or they'll steam instead of sauté and you'll miss out on those delicious blistered spots
  • Garlic can go from perfect to burnt in ten seconds, so have your beans ready before you even start the garlic
  • The blanching step might feel unnecessary but it's what guarantees that restaurant-quality bright green color
03 -
  • Buy green beans the same day you plan to cook them for the absolute best texture and flavor
  • If you're making these ahead, undercook the beans by 30 seconds in the blanching step since they'll continue cooking when you reheat them
  • A microplane makes perfect garlic slices in seconds if you don't have the patience for knife work
