01 - Place shredded coconut in blender. Pour in hot water. Blend on maximum speed for 2-3 minutes until mixture becomes homogenous and creamy.
02 - Line a large bowl with cheesecloth or clean kitchen towel. Pour blended mixture through cloth, squeezing firmly to extract all liquid. Press coconut pulp thoroughly to maximize yield.
03 - Using a funnel, transfer strained coconut milk to clean glass bottle. Seal tightly and refrigerate immediately. Shake well before each use.
