# Method:

01 - Heat butter and olive oil in a large Dutch oven or heavy pot over medium heat. Add onion, carrots, and celery, then sauté for 5 to 6 minutes until softened. Add minced garlic and cook for 1 additional minute.
02 - Stir in chicken pieces and season with salt, pepper, thyme, and dried parsley. Cook until lightly browned, approximately 4 minutes. Sprinkle 2 tablespoons of flour over the mixture and stir to evenly coat.
03 - Pour in chicken broth and bring to a simmer. Reduce heat, cover, and cook for 15 minutes to allow flavors to meld.
04 - While the stew simmers, whisk together 1 1/2 cups flour, baking powder, salt, and pepper in a mixing bowl. Stir in melted butter and milk until just combined. Gently fold in fresh parsley if using. Do not overmix.
