→ Cheese Topping

18 - 9 oz shredded halal cheddar cheese
19 - 3.5 oz shredded mozzarella cheese
20 - 2 spring onions, sliced
21 - 2 tbsp fresh coriander or parsley, chopped

# Method:

01 - Preheat the oven to 425°F. Toss fries with vegetable oil and salt. Spread in a single layer on a baking sheet and bake for 25–30 minutes, turning halfway, until golden and crispy.
02 - Heat olive oil in a large skillet over medium heat. Add onions and sauté for 3 minutes until translucent. Add garlic and bell pepper; cook for another 2 minutes.
03 - Stir in halal ground beef and cook, breaking up the meat, until browned for about 6–8 minutes.
04 - Add chili powder, cumin, paprika, black pepper, salt, and cayenne. Stir to coat the beef and vegetables in the spices.
05 - Mix in tomato paste, crushed tomatoes, and kidney beans. Simmer uncovered for 20–25 minutes, stirring occasionally, until thickened. Taste and adjust seasoning as needed.
06 - Transfer fries to a large ovenproof dish. Top evenly with hot chili, then sprinkle cheddar and mozzarella cheeses over the top. Return to the oven for 5–8 minutes until cheese is melted and bubbling.
07 - Remove from the oven, garnish with spring onions and fresh herbs. Serve immediately.

# Chef's Tips:

01 -
  • The homemade chili has layers of flavor that store bought versions cannot match, and it comes together in one pan
  • Everything bakes in stages so you can prep the chili while the fries get crispy in the oven
  • This recipe feeds a crowd easily and doubles perfectly for bigger parties
02 -
  • Do not skip flipping the fries halfway through baking or you will end up with soggy bottoms and unevenly cooked potatoes
  • Let the chili simmer long enough to thicken because watery chili will make the fries soggy the moment it hits them
  • Serve this immediately after the final bake because the texture changes dramatically once it sits for too long
03 -
  • A squeeze of fresh lime right before serving brightens all the rich flavors and makes every ingredient pop
  • Use a mix of sharp and mild cheddar instead of mozzarella for a more complex cheese flavor that still melts beautifully
