Chewy red velvet cookies with white chocolate chips and creamy Oreo filling inside.

# What You'll Need:

→ Cookie Dough

01 - 2 cups all-purpose flour
02 - 1/4 cup unsweetened cocoa powder
03 - 1 tsp baking soda
04 - 1/2 tsp salt
05 - 1/2 cup unsalted butter, softened
06 - 3/4 cup granulated sugar
07 - 1/2 cup packed light brown sugar
08 - 1 large egg
09 - 1 tbsp milk
10 - 2 tsp vanilla extract
11 - 1 tbsp red food coloring
12 - 1 cup white chocolate chips

→ Oreo Cream Filling

13 - 4 oz cream cheese, softened
14 - 2 tbsp unsalted butter, softened
15 - 1 1/4 cups powdered sugar, sifted
16 - 1/2 tsp vanilla extract
17 - 8 Oreo cookies, finely crushed

# Method:

01 - Preheat the oven to 350°F. Line two baking sheets with parchment paper and set aside.
02 - In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until well combined. Set aside.
03 - In a large bowl, beat butter, granulated sugar, and brown sugar with a mixer until light and fluffy, approximately 2-3 minutes.
04 - Add egg, milk, vanilla extract, and red food coloring to the butter mixture. Mix until fully incorporated.
05 - Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Fold in white chocolate chips by hand.
06 - In a separate bowl, beat cream cheese and butter until smooth and creamy. Add powdered sugar and vanilla, beating until fluffy. Fold in crushed Oreo cookies. Refrigerate for 10 minutes to firm.
07 - Scoop 2-tablespoon portions of cookie dough and flatten slightly. Place 1 rounded teaspoon of chilled Oreo filling in the center, then fold dough around the filling, sealing edges completely.
08 - Place stuffed dough balls on prepared baking sheets, spacing at least 2 inches apart to allow for spreading.
09 - Bake for 11-12 minutes, or until edges are set and centers appear slightly soft. Remove from oven.
10 - Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.

# Chef's Tips:

01 -
  • The filling stays perfectly creamy while the edges get that irresistible chewy crispness
  • They look absolutely stunning on a platter, like little ruby treasures hiding secret hearts
02 -
  • Warm filling creates a disaster during assembly—chilling it first is the difference between frustration and success
  • These cookies continue cooking on the hot baking sheet, so pull them out when centers still look slightly underdone
03 -
  • Gel food coloring produces that vibrant red with less liquid, which keeps your dough consistency perfect
  • Rolling the exterior of stuffed dough balls in extra crushed Oreos before baking creates incredible texture and looks stunning
