- Preheat the oven to 350°F. Line two baking sheets with parchment paper and set aside.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt until well combined. Set aside.
- In a large bowl, beat butter, granulated sugar, and brown sugar with a mixer until light and fluffy, approximately 2-3 minutes.
- Add egg, milk, vanilla extract, and red food coloring to the butter mixture. Mix until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Fold in white chocolate chips by hand.
- In a separate bowl, beat cream cheese and butter until smooth and creamy. Add powdered sugar and vanilla, beating until fluffy. Fold in crushed Oreo cookies. Refrigerate for 10 minutes to firm.
- Scoop 2-tablespoon portions of cookie dough and flatten slightly. Place 1 rounded teaspoon of chilled Oreo filling in the center, then fold dough around the filling, sealing edges completely.
- Place stuffed dough balls on prepared baking sheets, spacing at least 2 inches apart to allow for spreading.
- Bake for 11-12 minutes, or until edges are set and centers appear slightly soft. Remove from oven.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely before serving.
